The Zingara Ischitana

Miramare Sea Resort & Spa

Simple ingredients, authentic taste: the symbol of local street food

In the heart of the Mediterranean, the island of Ischia offers not only breathtaking landscapes and thermal waters, but also a rich and diverse culinary tradition.
Among its local specialties stands out the Zingara Ischitana, a sandwich that, thanks to its simplicity and authenticity, has become the emblem of Ischian street food.

The origins of the Zingara Ischitana

The Zingara Ischitana was born in 1977 in the village of Ischia Ponte, thanks to the idea of two young entrepreneurs who ran a pub-sandwich shop.
Wishing to offer their customers a quick yet tasty alternative, they created a simple sandwich with a unique flavor, which soon became an island icon.

The name “Zingara” (“Gypsy”) was chosen by the two creators to evoke something “free,” “simple,” and “nomadic,” just like the sandwich itself: quick to make, easy to eat anywhere, and suited to all tastes.
Additionally, the term “Zingara” carried an exotic and informal flair, perfectly in line with the youthful and creative spirit of the emerging pub cuisine on the island in those years.

Traditional ingredients

The strength of the Zingara Ischitana lies in the quality and freshness of its ingredients.
The traditional recipe includes:

  • Pane cafone: a rustic Campanian bread with a crunchy crust and soft interior.

  • Sweet prosciutto crudo: thinly sliced, it adds a delicate savory touch.

  • Fiordilatte: a fresh, light mozzarella that melts perfectly with the other elements.

  • Tomato: preferably ribbed or salad type, thickly sliced.

  • Green lettuce: such as romaine or iceberg, for added crunch and freshness.

  • Mayonnaise: spread on the bread to bind the flavors and add creaminess.

The sandwich is then grilled until golden and crispy on the outside, while keeping a soft and flavorful core.

Variations and reinterpretations

Easy to prepare and delicious to enjoy, the Zingara Ischitana is ideal for a quick lunch, a casual dinner, or a post-beach snack.
Though its fame has reached beyond the island, Ischia is where you’ll find the original version, prepared true to tradition.

While the classic recipe remains the most beloved, several variations have emerged over the years.
Some places offer versions with smoked provola, basil pesto, grilled vegetables, or even truffle.

These reinterpretations keep the spirit of the original alive while offering new flavor experiences.

Where to taste the Zingara Ischitana

Many sandwich shops across the island include it on their menus, each adding their own twist.
However, for an authentic and immersive experience, we recommend heading to the village of Sant’Angelo, where you can enjoy this delicious sandwich in a truly unique and atmospheric setting.
